Ingredients
- 4 medium to large cooking apples, cored
- 4 fl oz (100ml) water
- 1 medium onion diced
- 2 tbsp vegetable oil
- 4 oz (100g) sultanas, soaked for 30 mins and drained
- 4 oz (100g) lentils, cooked and drained
- 4 oz (100g) rice, cooked and drained
- 1/2 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 tsp sugar
- Preheat oven to 150C
- Cut the tops off the apples and scoop out the flesh, leaving shells about 1/4 in (0.6 cm) thick.
- Mix the flesh with the water and cook, covered, until tender
- Remove the lid and simmer until the moisture has evaporated and pulp is quite firm
- Meanwhile saute the onion in the oil until golden
- Combine half the apple pulp, the onions, half the sultanas and all the remaining ingredients except the sugar and mix well
- Stuff the apples with the mixture
- Combine the sugar with the remaining pulp and sultanas and spread the mixture over the base of a lightly buttered baking dish
- Pack in the stuffed apples
- Bake for 45 minutes.
