Creamy Curry

  • 1 dessertspoon vegetable oil
  • 1 small onion
  • 1 small carrot
  • 100g split red lentils
  • 1/2 tsp mild curry powder
  • 270 ml water
  • 50g sweetcorn
  1. Finely chop the onion and carrot
  2. Heat oil and soften onion for around 5 minutes
  3. Add carrot, lentils and curry powder
  4. Add water, stir and bring to the boil.
  5. Simmer for 15-20 minutes, stirring continually, until lentils are soft
