- 1 dessertspoon vegetable oil
- 1 small onion
- 1 small carrot
- 100g split red lentils
- 1/2 tsp mild curry powder
- 270 ml water
- 50g sweetcorn
- Finely chop the onion and carrot
- Heat oil and soften onion for around 5 minutes
- Add carrot, lentils and curry powder
- Add water, stir and bring to the boil.
- Simmer for 15-20 minutes, stirring continually, until lentils are soft
